I was my Mother’s shadow when I was a little girl. Everywhere she went I was sure to go. I can remember as a very small child if she was in the bathroom I would lay in the hallway crying, poking my fingers under the bathroom door wanting to be near her. (I got paid back for that one with my first born son.)
With five girls she stayed very busy. Chauffeuring, cooking, cleaning, oh and lets not forget all that laundry.
Some of my most treasured memories as a child were in the kitchen with my Mom. There was a special place on the counter that she would let me sit while she would cook. I would sit there in awe as she worked her magic.
Sometimes on Saturday mornings she would ask me what kind of pancake shape I would like. Whatever I would say she would create it, from Mickey Mouse pancakes to houses. My Mom the pancake artist… that is truly a lost art form.
One of my favorite desserts that my Mom makes is this spectacular, incredible, irresistible, Apple Pie! You just can’t beat it!

What was your favorite dessert that your Mom made you as a child?
Mom’s Deep Dish Apple Pie
Filling
5-6 Granny smith apples
¾ c. packed brown sugar
½ c. sugar
1 t. cinnamon
2 T. flour
¼ t. nutmeg or allspice
2 t. lemon juice
Peel and slice apples. Combine remaining ingredients to sliced apples and mix apples until coated. Put apple mixture into an unbaked pie crust. Place several pats of butter on top of apples. Lay second crust on top of apples, prick crust with a fork. (Sometimes I brush milk onto the crust to give it a rich golden brown color while baking.)
Bake pie for 10 minutes in a 425 degree oven. Decrease oven temperature to 375 degrees and bake approximately 30-40 minutes until golden. Note: During baking time you may need to wrap the edges of the pie in foil to keep them from browning to quickly.
Double Pie Crust
2 ½ C. Flour
¾ C. Vegetable or Canola Oil
1 t. salt
10-12 T. ice cold water
Mix all the ingredients together and half the dough. Roll out on floured surface. Line crust in pie plate. Follow above directions to complete pie.
