Mississippi Mud Cake

Do you ever have one of those days that you just want to dive head first into a bowl of chocolate? Those days are frequent for me. I confess….my secret is out! Kristi is addicted to CHOCOLATE!

Me and Chocolate are like peas and carrots…or like peanut butter and jelly sandwiches…we are the perfect fit.

Below you will find the recipe for Mississippi Mud Cake. It is rich, decadent and it will make your eyes pop out of their sockets. I made this cake so much when I was pregnant with my first child I am surprised I didn’t turn into one.

2 sticks margarine
4 eggs
2 c. sugar
1 ½ c. flour
1/3 c. cocoa
1 t. vanilla
¾ c. coconut
1 ½ c. chopped pecans

Frosting:
3 ½ c. sifted powdered sugar
1/3 c. cocoa
6 T. milk
1 stick of melted butter
1 ½ c. chopped pecans

Beat eggs until thick. Add sugar, melted and cooled margarine and vanilla. Mix in sifted flour and cocoa. Mix well. Add coconut and pecans. Pour into a greased and floured 9×13 inch pan. Bake at 350 degrees for 30 minutes or until toothpick comes out clean. While cake is still warm spread an entire jar of marshmallow cream on top. Mix frosting and spread over warm cake. Cut into squares. Freezes well.
